This season, there are plenty of tasty new additions to Vail, Colorado’s already stellar dining scene. Here are the details of these additions to the Vail:
Pendulum
There’s a new restaurant opening this season in the former Ore house space at 232 Bridge Street in Vail. Slated to open in mid-December, Pendulum will serve “modern, upscale American cuisine … with slight Latin American influences,” according to executive chef Jake Burkhardt (formerly of Aspen Kitchen) and as reported in this recent Vail Daily story.
A rotisserie and wood fired oven will be used to create many of the dishes. Diners can expect innovative and interesting shared plates like Tots & Caviar (housemade Yukon gold potato, garlic and onion tater tots) and braised and fried crispy octopus with charred sweet potatoes. On the entrée side you’ll find items like butter-based Alaskan halibut with braised red cabbage, smoked chorizo broth and spruce oil. More Info
White Bison
Though White Bison isn’t new, it has been closed for renovations and will open with a new look and a new menu Dec. 1, according to whitebisonvail.com. Chef Burkhardt (chef at Pendulum – see above) will also oversee things over at White Bison, located at 223 Gore Creek Drive. Burkhardt called the new menu “farm-driven and seasonal,” as reported in this recent Vail Daily story.
Think tasty, hearty fare like local kale salads; duck confit poutine; French-style bison tartare; and braised bison short ribs with Brussels sprout hash. The restaurant will also serve brunch on Saturdays and Sundays this winter. Visit whitebisonvail.com for more information.
Almresi
Almresi, a restaurant inspired by the Alps, is taking over the old Tap Room space, located at the top of Bridge Street (333 Bridge Street). Slated to open in December, the traditional, cozy eatery will offer breakfast, lunch, après ski and dinner service.
A street-level takeaway window serving up pastries, sandwiches, pretzels, coffees and more will make it easy for passersby to fuel up before hopping on the gondola, said the restaurant’s general manager, Alyssa Thoma. German, French and Austrian influences are woven throughout the menu, which will include European specialties like Alpler Macaroni (a Swiss favorite with pasta, bacon, onions, potatoes and topped with cheddar cheese), fondue, homemade black forest cake, creative Gluhwein cocktails, European wines and German beers. Village Bagel
Craving a real-deal New York style bagel? Village Bagel is a new bagel delivery service ‘spreading’ old-fashioned bagels and flavored schmears around the Vail Valley. Village Bagel is the brainchild of Connie Leaf, a “New Yorker living in the mountains providing a slice of home.” Leaf spent nine months “experimenting with different recipes, water solutions, and oven temperatures to bring the NYC bagel experience to the Rocky Mountains,” according to her website, www.villagebagel.co. “Chewy on the inside, crunchy exterior, and a rich, developed flavor made possible by a 24-hour fermentation process, six simple ingredients, and a whole lotta love and passion rolled into every bagel.”

Sundae
There’s a new ice cream shop coming to Vail. Located in the former Marble Slab location, the shop will aptly be called Sundae. We’ll update this post with more information when we have it.
